The Right Stuff
If you’re looking for a carb-free snack, or a tasty side dish or even a very light dinner b/c you ate a s**t-TON during the day, then this is the dish for you.
I threw this together when I was doing a torturous cleanse (it was free), but hunger was taking over and I was becoming a scary, bitchy monster. I knew I had to act fast and “cheat” in the best way possible. I couldn’t have any dairy or grains, so I threw together “all the right stuff.”
- 1/2 C. black beans (don’t heat)
- 1 ripe avocado
- chopped yellow or white onions (as many or as little as you want)
- 1 lime
I figured that this couldn’t ruin my cleanse that much right? I mean it’s veggies/fruit and beans. What is wrong with that?
Just mash the entire avocado until smooth, squeeze in fresh lime juice and stir in black beans, onions and salsa. Mix in cilantro.
That’s all you really need! If you want, you can add cojita cheese, cayenne pepper or any other seasonings, but I don’t think you really need it.
