All-Grown-Up Grilled Cheese

Who doesn’t love a grilled cheese with tomato soup on a chilly day? It brings us back to our childhood and warms the soul. Well, I wanted to add some protein and pizzazz to my grilled cheese but still make it healthy, so I started cookin’ and it was DELICIOUS!!

All you need is:

2 slices of whole grain bread (on 1 side of each slice, spread a light layer of olive oil over entire piece)
1 slice yogurt jalapeno cheese from Trader Joe’s
1 or 2 slices of low sodium turkey breast (or any other lunch meat you like)
Avocado
Yogurt Chive Cilantro Spread from TJ’s
Fresh sauteed spinach
Sauteed onions (optional)
Olive Oil

Saute spinach and onions first and set aside. Heat turkey for 1-2 minute in a skillet and set aside or justĀ  keep on LOW heat (to save on dishes, just heat the turkey in the same pan with the sauteed spinach and onions).

Coat skillet with a little olive oil. Place one slice of bread, oil side down, on a separate skillet on MEDIUM. Place cheese on the bread and then add sauteed spinach, onions and turkey on top of the cheese. Take the 2nd slice of bread & spread yogurt chive cilantro spread on the non olive oil side. Add sliced avocado on top of the yogurt spread and place that side on top of the turkey mixture on the skillet, making a sandwich. Flip sandwich when needed making sure not to burn. Once both sides of the sandwich areĀ  golden brown, remove from skillet, slice in 1/2 and serve with your favorite tomato soup.
